It was a rainy evening in Mexico City and Gaba was somehow fully booked out—yet Lauren and Noah got a seat at the chef's table anyway. Born in East LA to Mexican parents, raised partly in Mexico City, back to California to cook at Bestia and Here's Looking at You, then Arca in Tulum, then Emilia — his food carries all of it. On what he calls Gaba's food: "I can't call it Mexican food, but I want it to FEEL Mexican." Opened Gaba in 2023 after a Noma work visa fell through. One Michelin Star, Michelin Guide Mexico 2026.
